Spinach & Strawberry Salad

Spinach salad with strawberries and Michele's Granola - vegan, gluten-free
Looking for a salad to wow at a warm-weather picnic? Michele is sharing a simple, wholesome recipe from her own kitchen. Fair warning: Make an extra batch of this creamy homemade dressing packed with sesame and poppy seeds--you'll want to pour it on salads and grilled vegetables all year long!


Spinach & Strawberry Salad
(adapted from Allrecipes.com)

2 bunches spinach, rinsed and torn into bite-size pieces (we also added a handful of curly kale for texture)
4 cups sliced strawberries
½ cup slivered almonds
1 cup Michele's Limited Edition Strawberry & Red Quinoa Granola or other Michele's variety of your choice

½ cup vegetable oil
¼ cup distilled white vinegar
½ cup white sugar
½ teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds

  1. In a large serving bowl, toss together the spinach and strawberries
  2. In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds and poppy seeds. Pour over the spinach and strawberries, and toss to coat
  3. Sprinkle the almonds and granola on top and serve
