Snack time just got a little cozier! These Chocolate Chip Pancake Granola Energy Bites blend simple, whole grain goodness with the nostalgic flavor of a pancake breakfast. These bites are easy to make and travel well, making them an ideal on-the-go breakfast, or a quick feel-good snack anytime.

Makes 14 bites

 

Ingredients:

1 cup quick oats

1 cup Michele's Breakfast Nook Chocolate Chip Granola, gently crushed to eliminate large chunks

½ cup shredded coconut

½ cup sunflower seed butter

¼ cup maple syrup (up to 1-2 tablespoons additional only if needed)

1 tsp vanilla

½ cup chocolate chips

¼ tsp salt

 

Directions:

  1. Add oats, granola, coconut, sunflower seed butter, syrup, vanilla, chocolate chips, and salt into a large mixing bowl. Mix with a spatula or large spoon until well combined.
  2. Portion 2 tablespoons worth of dough for each bite.
  3. Using the palms of your hand, roll into a round shape. Note: If the dough is too dry and crumbly, add additional maple syrup, one tablespoon at a time until the dough easily forms into a ball.
  4. Allow them to rest for 10 minutes before consuming.

 

Storage:

The bites can be stored in an air-tight container at room temp for 3-5 days or refrigerated for one week. If you refrigerate them, allow them to come to room temperature before enjoying.
